Priya had been working on the cake for two days. It was the biggest order her small home bakery in Manchester had ever received: three of lemon white chocolate cream and two hundred sugar flowers that she had made by hand, one at a time, late into the night. The wedding was at three o'clock that afternoon, and the cake had to be at the hotel by two.

At eight in the morning, she was standing in the kitchen in her dressing admiring her work. The cake was sitting on the table by the window, where the light was best for the photos she was planning to put on her website. She went upstairs to have a quick shower. That was her first mistake.

She was drying her hair when she heard the crash. It was not a loud noise, more of a soft, heavy but she knew immediately what it meant. She ran downstairs. Biscuit, her ginger cat, was sitting on the cream off his with an expression of complete innocence. The cake was on the floor. All three had collapsed into a single sad mountain of and broken flowers.

For a few minutes, Priya simply sat on the kitchen floor and cried. Then she looked at the clock. It was ten past eight. She had six hours, one oven, and nowhere near enough eggs.

Her neighbor, Andres, opened the door in his pajamas. He was a chef from Medellin who worked late shifts at a restaurant in the city center, and he had obviously been asleep. But when Priya explained what had happened, he didn't ask a single question. He disappeared inside, came back with a box of eggs, a bag of flour and his own and said, "Okay. Tell me what to do."

What followed was the most intense morning of Priya's life. While the first was baking, Andres was cream and Priya was rolling out sugar paste for new flowers. Every twenty minutes the oven timer rang, and every twenty minutes they jobs without a word, like two people who had been working together for years. At one point, Andres's phone rang. It was his boss, asking if he could come in early. "Sorry," Andres said. "I'm in the middle of a wedding."

There was no time for two hundred handmade flowers, so Andres had an idea. When he was a boy, his grandmother used to decorate her cakes with fresh fruit and flowers from her garden. Priya's back garden was full of roses and lavender. By half past twelve, the new cake was covered with thin slices of lemon and tiny purple flowers, and it looked completely different from the one she had designed.

Priya was terrified. The bride had chosen the original design from a photo months earlier, and she had been very clear about what she wanted. Andres helped her carry the cake to the van, and at ten to two they delivered it to the hotel. Priya waited in the car park, feeling sick, while the wedding planner went inside to show the bride.

Ten minutes later, the bride herself came out, still in her dressing with her hair half done. Priya prepared herself for an angry speech. Instead, the bride hugged her. "My grandmother had roses exactly like those," she said. "It's even better than the one I ordered. How did you know?"

Priya didn't tell her the truth until a year later, when the couple ordered a cake for their first anniversary. By then, the story had become a family joke. As for Biscuit, he was officially banned from the kitchen, and Andres now has a permanent job: every Saturday, he helps Priya with the weekend orders.
